Coffee processing begins with packing.which can be done in two ways:
strip picking wherethe entire crop is harvested at one time either by hand or machine, and selectively picking, where only the ripe coffee cherries are hand-picked individually .After
harvesting ,the beans undergo one of several processing methods: wet process, dry process ,or semi-dry process.
In the wet process, the coffee cherries are sorted by immersion in water so that unripe or defective fruits float while good , ripe fruits sink.

The ferment-and-wash method involves using microorganisms to break down the mucilage layer covering the bean through fermentation, which usually lasts 24-36 hours ,after which the beans are thoroughly washed with water.Alternatively .machine-assisted wet processing removes the mucilage mechanically through scrubbing without fermentation.Hewever, this process generates coffee wastewater, which can act as a serious pollutant .After pulp remoal ,the beans must be dried to a water content of about 10% to ensure stability and prevent deterioration
In the dry process , the cherries are first cleaned , often by winnowing with a sieve , or by flotation in washing channels to separate the the ripe fruits , Then , they are spread out under the sun on concrete patios or raised matting to dry , of drying is incomplete , the beans remain too moist and are prone to fungal or bacterial attack.

The semi-dry process involvees removing most of the pulp , leaving the mucilage coating intact .The beans are then held for up to one day before the mucilage is washed off , and the resulting parchment coffee is partially
dried in the sun to abut 30-35% moisture content before sale.
The milling stage includes several steps that finalize the product .Huling removes the parchment of dry skin using machines ranging from simple millstones to more sophisticated devices that gently impact the beans.

Polishing follows , improving the appearance of green coffee beans and helping eliminate chaff , which is a byproduct of roasting , Each of these step-from sorting and separation to drying , milling , and polishing is essential for ensuring high-quality coffee that meets food industry standards
